At Pancheros Mexican Grill, all you have to do is select your menu item and your preferred ingredients to add to the freshly-pressed tortilla. It helps to know some Pancheros nutrition facts as to what ingredients to order with your tortilla at the “most popular” restaurant, voted by Sports Illustrated in 2006 to down your chow in, when Iowa City’s bars close.

Pinto instead of black beans: the former may have 11 more calories than the latter but pinto beans have 2 more fiber grams and 3 more grams of protein over their black siblings, absolutely worth the 11 additional calories.

Chicken: get your protein from poultry rather than from bovine because one serving of chicken has only 121 calories and 18 grams of protein, a great deal for less calories than the beef or pork selections.

Vegetables: if you’re looking for additions to your tortilla with the lowest number of calories, opt for veggies and you get only 23 calories.

Toppings: your best bets are the ancho salsa (two calories and zero fat), lettuce (one calorie, zero fat), and pico de gallo (12 calories and zero fat). Ditch the cheese (77 calories and 6 grams fat) and the tomatillo salsa which may only have one fat of gram but with 21 calories.

What to skip entirely? The bag of chips (560 calories, 32 fat), the 112-calorie sour cream (fat is at nine grams), and the queso sauce (175 calories, 14 grams fat).
